Summer peach, winter walnut and silky tofu it doesn’t get any better than that.
This summer peach salad is hearty enough to keep you bicycling and sweet enough to keep you happy.
Peaches, especially golden cling-stone peaches, are one of summer’s best offerings and they are amazing for your skin, either eaten or used directly on the face.
Salad Ingredients: (serves one or two)
– One cling-stone/golden peach
– 15 Walnuts
– Chevre Goat’s cheese (as much or as little as you like)
– Tofu 100 or 200 grams (cooked in oil, balsamic & Bavarian (or honey) mustard).
– 4 Lettuce leaves
– 5 stems of Vietnamese Basil
– 6 stems Coriander
– 4 stems Mint
– Cucumber (small Lebanese)
Dressing Ingredients:
– juice of half an Orange, juice of half a Lemon, flat teaspoon of Salt, 1/4 cup of Oilve Oil
To How Make:
Dice the peach, tofu, cucumber and Chevre cheese.
Cook tofu in oil, balsamic vinegar & baverian (or honey) mustard, till soft and hot, and put aside.
Finely chop lettuce, basil, coriander and mint and toss together.
Roughly chop walnuts.
Toss all ingredients together, pour dressing over top and serve.
