This raw food salad is not for the faint hearted, it will make you feel amazing.
Make it for lunch or a light dinner, either way it will fuel the bicycle fun!
Ingredients:
2 fresh figs diced.
1 x med/lrg carrot grated.
1 cup of white cabbage finely sliced.
Handful of dill finely chopped.
Handful of basil finely chopped.
Handful of mint finely chopped.
Dressing:
2 tablespoons flaxseed oil (olive, avocado or macadamia oil will substitute).
Generous pinch of salt
1 teaspoon cracked pepper.
Juice of 1/2 small lemon.
Directions:
Place grated carrot and sliced cabbage in serving bowl and drizzle with juice of 1/2 a lemon, and toss through.
Place chopped dill, mint & basil on top sprinkle with salt and pepper and drizzle ith flaxseed oil.
Place diced figs on top of salad.
Gentle toss salad, serve.
