
Make as such, or as little, as you like!
This 7-step salad is super simple, super delicious and super nutritious. Make as much, or as little, as you like!
– Red lettuce (3 large leaves)
If you don’t have red lettuce any sort of lettuce will do, but red tastes best.
– Vietnamese Basil (leaves from two full stalks).
This flavour compliments the plum, but if you don’t have Vietnamese Basil, normal basil can be a substitute.
– Cucumber (one small Lebanese)
This bulks out the salad, without overpowering the other great flavours.
– Red plum for tang (1.5 or 2 depending on size)
If you don’t have plums then pear, peach, nectarine or even apple will work.
– Almonds (generous handful)
These add flavour and crunch! Again any old nut will do, but Almonds will taste best with the Plum and Goat Cheese.
– Cranberries (small handful)
These balance the zest of the bitter basil and the tangy plumb. Raisins, prunes or currents can be used.
– Fresh Ginger (6 thin 1cmx1cm slivers)
Adds spice to the fruit and nut flavours. Dry ginger powder will be ok, but make sure you stir it into the oil first.
– Goats cheese (3cm x 2 cm x 3cm)
Cools the ginger and provides the essential sustaining fats. Blue cheese or another soft cheese will work, but a good quality Goat’s Cheese will be yummier!
– Honey (approx one teaspoon)
Sweetens the bite of the oil & cheese. Other natural sweeteners are maple syrup, but be careful it’s very rich.
– Oilve Oil (1/4 cup)
Gets the flavours mingling and soften the rough lettuce. Almond/Avocado oil will work, but peanut & other vegetable oils are too greasy.
– Salt (generous pinch)
Brings out the flavours of all the ingredients.

All RAW Ingredients!
1. Roughly slice the lettuce, basil and cucumber into small pieces. Throw on a plate.
2. Slice plum in to slivers and toss on to greens.
3. Use a sharp knife to chop the cranberries and ginger in to fine chunks.
4. Throw ginger, cranberries and raw almonds (never use roasted) over top.
5. Crumble generous piece of goats cheese over top.
6. Dribble teaspoon of honey over whole salad.
7. Mix salt into oil and then drizzle over salad.
